Pan-roasted liempo with Mang Tomas Sauce | Paksiw na liempo sa Mang Tomas





Paksiw is a term associated to a dish that is cooked with vinegar and garlic.Lechon Paksiw is a Filipino pork dish made from leftover roast pig which is known as “Lechon”. Aside from using roast pig, leftover Lechon kawali can also be used.Making this dish is a practical way to recycle leftover pork. Instead of reheating the same dish over and over, making paksiw out of it makes the pork more flavorful bringing more life to the ingredient.

Here’s my recipe for my Paksiw na liempo.  I decided to roast the pork to make it healthier and get rid of some unwanted fats rather than soaking it in and allowing it to absorb additional fats.


Estimated time of preparation and cooking: 45 minutes
Good for 3-4 persons



INGREDIENTS:

3/4 kg. Pork Liempo
3 tbsp White vinegar
1 cup Mang Tomas Sarsa
1/2 cup  Pork broth
2 tsp. Sugar
1 large Onion, sliced
5 cloves Garlic, coarsely chopped
Black peppercorns
3 pcs. Bay leaves
1 tsp. Vegetable oil
1 tsp. Salt



PROCEDURES:
  1. Place the pork, water, and salt in a pot and bring to a boil. 
  2. Cook pork for at least 10 minutes.
  3. Drain and reserve ½ cup of the broth. Set aside the broth. Air dry the pork for at least an hour.
  4. Roast the pork in the hot pan until it is golden brown and the skin are crunchy
  5.  Chop into bite sizes when done.
Paksiw Sauce
  1. Heat oil in a sauce pan. You can use the fat from the pork if you want. 
  2. Saute garlic and  onion until texture becomes soft.
  3. Stir in the rest of the ingredients and bring to a boil. Let is simmer until the sauce is thick. 
  4. Put-in the roasted pork and simmer for 25- 30 minutes.
  5. Adjust sugar and salt as needed. It should taste like sweet-sour-a bit salty.
  6. Serve,Share and Enjoy!

Chicken à la King



is a recipe normally consisting of diced chicken in a cream sauce. Often with mushrooms and vegetables. This is usually served over toasted bread, pasta or steamed rice. but for this recipe I used chicken thigh and leg.

Good for 4 persons







INGREDIENTS:
3/4 kg chicken thigh and leg
1 cup button mushrooms, sliced
1 370 ml. evaporated milk
2 tbsp. cornstarch
1 1/2 cups chicken broth
1 onion, chopped
3 tablespoons butter or margarine
1 green & red bell pepper, diced

salt and pepper to taste

PROCEDURES:
1. In a saucepan, melt butter the saute onion and add chicken, mushrooms and bell pepper for 10 minutes.
2. Add milk and chicken broth simmer for 15 mins then add dissolved cornstarch in 1/4 cup water,stir constantly until smooth.
3. Add salt and pepper then continue cooking until thick and begins to bubble.
4. Transfer to serving bowl then serving with steamed rice. Serve hot!

Chicken Afritada

 is one of those special, Spanish-inspired Filipino dishes that are most common during “fiestas”, birthday celebrations, and other special occasions. Just like the Mechado and Caldereta, this popular Filipino dish is a tomato sauce-based chicken stew dressed with bell peppers, tomatoes, onions, and potatoes. The word “afritada” is actually a Spanish word which means fried. Don’t get the wrong idea, but you don’t actually just fry the chicken and call it Chicken Afritada. Frying the chicken until it’s medium brown is only the first part of the whole Chicken Afritada process.

There are some variations of this recipe like if you prefer to use pork instead of chicken. Either way, the cooking process remains the same.

Estimated time of cooking 30-45 minutes
Good for 4-6 persons



INGREDIENTS:

3/4 kg chicken, cut into serving size
2 medium potatoes, chunks
1 large carrot, chunks
1 medium red & green bell pepper, chunks
1 medium onion, chunks
1/4 cup green peas
4 gloves garlic, minced
1 200 grams tomato sauce
1 1/2 cup water
1 tbsp fish sauce
salt & pepper to taste
3 tbsp cooking oil

PROCEDURES:
  1. Sauté garlic and onions in hot oil in a saucepan or pot.
  2. Add chicken and fry a little bit until light brown.
  3. Pour the tomato sauce and stock. Bring to a boil and allow to simmer for 25 minutes or until the chicken is almost tender.
  4. Add potatoes and continue to cook for 10 minutes or until the potatoes are cooked.
  5. Add the green & red bell peppers, Simmer for an additional 2 minutes.
  6. Salt & pepper to taste.
HOT TIP:
You can also semi-fry the potatoes before adding them.

Bicol express



This recipe is a popular Filipino dish especially in Bicol Region. Normally the pork cooked with coconut milk, shrimp paste, green and red chili.

Estimated time preparation and cooking: 45-60 minutes
Good for 5-6 persons













INGREDIENTS:
1 kilo pork(1/4 fat), cut lengthwise
1/2 cup of long green peppers(siling pangsigang)  , cut diagonally
1/2 cup string beans
2 cups coconut milk
1 tbsp. shrimp paste (bagoong alamang)
4 cloves garlic; chopped
1 small onion; chopped
2 pieces red chili(siling labuyo)
2 tablespoons vegetable oil
Salt to taste

PROCEDURES:

1. In a pan, heat vegetable oil then saute garlic and onion.
2. Add sliced pork, continue sauteing until colors turn to brown.
3. Add the shrimp paste then mix for another minute.
4. Pour coconut milk then simmer until reduced.
5. Add the green peppers and red chili.
6. Adjust seasoning with salt according to taste.
7. Serve with steamed rice. Enjoy!

Beef and Mushroom Spaghetti



Beef and mushroom spaghetti  is an easy and quick pasta dish that only takes 20 minutes or less. It is usually consist of pasta and a red sauce topped with beef, mushrooms and cheese.

Estimated time of preparation and cooking: 15-20 minutes.
Good for 3-4 persons









INGREDIENTS:
200 grams spaghetti pasta
1/2 cup full cream milk or fresh milk
1/2 cup grated cheese
4 gloves garlic, minced
1 medium-sized onion, minced
250 grams ground beef
4 pcs Hotdogs, sliced
1 medium-sized green bell pepper, diced
1/2 cup button mushrooms, sliced
2 tablespoons olive oil
2 pieces dried bay leaves

PROCEDURES:
Part 1
1. In a large pot, pour the water in and bring to a boil
Put-in the salt and oil
Add the Spaghetti Noodles and cook until tender (see package for cooking time) then set aside

Part 2
1. In a pan, heat oil and saute garlic and onion then add beef and cook for 3-5 minutes.or until meat is no longer pink.
2. Add the bay leaves , add  hotdogs and cook for 2 minutes & add mushrooms then stir cook for 3 minutes.
3. Put-in the tomato sauce and brown sugar then simmer for 10 to 15 minutes
4. Add pasta, milk and cheese then simmer 3 minutes or until beginning to thicken.
5. Adjust seasoning according to taste. Transfer to serving plate then top with grated cheese.Serve hot. Share and Enjoy!

Chicken Pork Adobo [CPA]



chicken and pork adobo is another variety of popular Filipino adobo. Usually we serve chicken or pork adobo but in this recipe we will serve them both in one dish. The procedure is also the same in another adobo, we cook chicken and pork in soy sauce, vinegar, bay leaves, pepper corns and another seasonings.

Estimated time of preparation: 10 minutes
Estimated time of cooking: 30-40 minutes
Good for 4-6 persons







INGREDIENTS:
1/2 kilo pork, cut into serving pieces
1/2 kilo chicken, cut into serving pieces
1/2 cup soy sauce
1/2 cup vinegar
1/2 small garlic head, crushed
1 small onion, chopped
4 pieces bay leaves
1-2 cups  water
4 tablespoon cooking oil
1/2 teaspoon pepper corns
salt and sugar to taste

PROCEDURES:
  1. Heat oil in a pan.
  2. Once the oil becomes hot, add the garlic. Cook until the color turns golden brown.
  3. Remove the garlic and set aside. Add pork and chicken. Cook for 10 minutes or
  4. until the color turns light brown.
  5. Add whole peppercorn, bay leaves,  soy sauce, and water. Let boil and simmer until the meats
  6. are tender.
  7. Add the sugar and stir.
  8. Pour-in vinegar and let boil.Simmer until most of the liquid evaporates.
  9. Add salt to taste. Put-in the fried garlic, stir, and cook for 5 minutes.
  10. Serve. Share and enjoy!

Spicy buttered shrimp with garlic & ginger

buttered shrimp with garlic recipe is a tasty Filipino dish, basically shrimp sauteed in butter with lots of garlic & ginger and the siling labuyo gives the dish the spicy taste flavor. This is another mouth-watering dish that is truly enjoyed by most Filipinos.

Estimated time of preparation and cooking: 30 minutes
Good for 4 persons.









INGREDIENTS:

3/4 kilo shrimp
1/2 cup butter
12 medium cloves garlic, minced
1 medium ginger, sliced
2 teaspoons salt
1/2 teaspoon ground pepper
1 tablespoon sugar
1 teaspon siling labuyo,chopped
2 tablespoons chopped parsley, for garnish(optional)

PROCEDURES:

1. In a saucepan, melt the butter in a low heat.
2. Saute the garlic and ginger until the color turns light brown.
3. Add shrimp, cook until the liquid completely absorb.
4. Add siling labuyo, then adjust seasoning with salt and ground pepper
5. Remove from heat and arrange the buttered shrimp on a serving platter.
6. Garnish with parsley, serve and enjoy!
